On my recent visit to the Biofach/ Vivaness – Europe’s largest trade fair for organic food and cosmetics, I stumbled across the booth of Prestige Inc, Canada. Jo-Ann, their International relations consultant filled me in on the recent developments in the field of organic maple sirup.

A game changer for food
“Lyon is the capital of gastronomy” wrote Curnonsky (Maurice Edmond Sailland), the Prince of Gastronomy in 1935. Little has changed since then with Lyon, France hosting more than 4000 registered restaurants many of them being awarded or listed in the famous Guide Michelin.
All the more astonishing, when introduced to maple flakes, a flaky form of dried maple sirup, leading chefs of Lyon were excited to see how organic maple flakes upgrade their already high class dishes. The combination of maple flavour with sweetness and crunch blew the chefs away. According to Jo-Ann they immediately looked for ways to include organic maple flakes into their dishes.
How could you use organic maple products?
- Add maple flakes to your recipe to add this certain sweet crunch. Works great with dry food.
- Add maple sugar instead of sweet sirups to add sweetness without adding water
- Use either one instead of regular sugar for this tangy sweetness.
